Serves 4
1 whole chicken cut up into small pieces
½ glass olive oil
6 cloves garlic
1 onion
½ glass dry white wine
1 bunch parsley coarsely chopped
Salt
Freshly ground pepper
On a cutting board, cut onions into slices 1cm thick. Thinly slice garlic cloves. Set aside. Heat the olive oil in a large pot over high heat.
Season chicken pieces with salt and freshly ground pepper. Sear on all sides in the hot olive oil until golden brown. Reduce heat to medium.
Add onions and garlic and continue cooking for 3-4 min. Finish with the white wine. Season with salt and freshly ground pepper, and reduce heat to low. Cover and simmer for 30-35 min.
When the 30-35 minutes have elapsed, add coarsely chopped parsley. Cook for a further 10 min. Remove from heat. Let stand for 10 minutes and serve.
