500g penne
500g ground beef
250g tomatoes skin removed, finely chopped
40g soy sauce
1 small onion finely chopped
1 clove garlic minced
100g olive oil
2 pinches smoked paprika
5 dried prunes chopped
2 tbsp parsley finely chopped
Freshly ground pepper
In a large pot of boiling, salted water, cook the penne until al dente. When the penne are ready, drain and rinse the pasta under plenty of cold water. Set aside and let drain. Heat the olive oil in a large, nonstick skillet over high heat. Sauté the onions for 1-2 min, stirring constantly to prevent edges from browning.
Add the finely chopped tomatoes and garlic to the skillet and cook for another 1-2 min. Add the ground beef, soy sauce, smoked paprika, and chopped prunes. Cover and simmer until the ground beef has been thoroughly cooked.
When your sauce is ready, season with freshly ground pepper. Add the penne and finely chopped parsley. Stir one last time and serve in deep individual bowls.
