3 kg pork
100 ml sunflower oil
4-5 pinches salt
2 tbsp artisià (cumin)
2 tbsp coriander powder
¾ glass red wine
½ small glass water
Freshly ground pepper
On a cutting board, cut the pork meat into bite-size pieces. Place in a bowl. Season pork bites with salt and stir to coat. Heat the sunflower oil in a nonstick pot over high heat. Sear the pork bites on all sides until golden brown. Season pork bites with the artisià (cumin) and the coriander powder. Continue cooking for another 10-15 min, stirring pork bites at regular intervals.
Finish with the red wine and water. Turn heat to low and simmer until the sauce begins to thicken. Serve sprinkled with a few grindings of pepper.
